&lt;p&gt;So this morning I made some Chocolate Peanut Butter Pancakes. This recipe is Vegan/Vegetarian. Recipe is easy like all my others!&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;&lt;em&gt;What you need&lt;/em&gt;&lt;/strong&gt;&lt;/p&gt;
&lt;ul&gt;&lt;li&gt;1c Whole Wheat Flour&lt;/li&gt;
&lt;li&gt;2 tbsp Honey/Agave Nectar&lt;/li&gt;
&lt;li&gt;1c Soy/Almond Milk&lt;/li&gt;
&lt;li&gt;2 tbsp Coco powder&lt;/li&gt;
&lt;li&gt;2 tbsp Baking Soda&lt;/li&gt;
&lt;li&gt;1 tbsp Vanilla extract&lt;/li&gt;
&lt;li&gt;2 tbsp Vegetable Oil&lt;/li&gt;
&lt;/ul&gt;&lt;p&gt;&lt;strong&gt;&lt;em&gt;Toppings&lt;/em&gt;&lt;/strong&gt;&lt;/p&gt;
&lt;ul&gt;&lt;li&gt;1 tbsp Peanut Butter (Organic)&lt;/li&gt;
&lt;li&gt;Strawberries&lt;/li&gt;
&lt;li&gt;Bananas&lt;/li&gt;
&lt;li&gt;Honey/Agave Nectar&lt;/li&gt;
&lt;/ul&gt;&lt;p&gt;Alright first things first is start heating your pan or griddle medium heat. I use a griddle its super easy to use/heat/cook/clean. Then start mixing your drys this includes Coco Powder, Whole Wheat Flour, and Baking Soda. Next mix in your milk, Honey/Agave, Vanilla Extract, and Vegetable Oil with your drys. Mix until the consistency is smooth.&lt;/p&gt;
&lt;p&gt;When it&amp;#8217;s time to cook, oil your griddle. I use vegetable oil and spread out a tiny bit onto the griddle. Next drop at least 1/4 cup of batter onto your griddle. When your cakes start to bubble that&amp;#8217;s when you know its time to flip. Its about 2-3 minutes until you start seeing your bubbles. Then flip your cake onto the other side for about 2 minutes. Flip them off into a plate and add your peanut butter, banana&amp;#8217;s, strawberries, and honey/agave. This weekend my boyfriend took me to Siam Square which is Thai restaurant in Indianapolis. At Siam I tasted my first Tom Yum Soup. I fell in love and tried to study it as close as possible. I will admit mine is no where as good as Siam Square in Fountain Square Indianapolis but I gave it a shot.&lt;/p&gt;
&lt;p&gt;After work today I went into the grocery store thinking I can mimic the taste of the soup I had this weekend. I stood in front of the produce for about a hour. I couldn&amp;#8217;t figure out what was in the soup. I just started to grab random stuff and this is what I ended up with!&lt;/p&gt;
&lt;p&gt;&lt;em&gt;&lt;strong&gt;Tom Yum Soup&lt;/strong&gt;&lt;/em&gt;&lt;/p&gt;
&lt;ul&gt;&lt;li&gt;4 cups Vegetable stock (low sodium) &lt;/li&gt;
&lt;li&gt;2-3 tbsp Red Curry &lt;/li&gt;
&lt;li&gt;1/2 can Coconut Milk (add more if you want it to be richer)&lt;/li&gt;
&lt;li&gt;1 block Firm Tofu &lt;/li&gt;
&lt;li&gt;1 tbsp Ginger Root &lt;/li&gt;
&lt;li&gt;1/2 cup Bamboo Shoots &lt;/li&gt;
&lt;li&gt;1 Cup Broccoli &lt;/li&gt;
&lt;li&gt;1/2 cup Carrots &lt;/li&gt;
&lt;li&gt;1/2 Red Bell Pepper &lt;/li&gt;
&lt;li&gt;1/2 cup Mushroom (shiitake and button) &lt;/li&gt;
&lt;li&gt;1/4 cup Chives green onion &lt;/li&gt;
&lt;li&gt;1/2 cup Tomatoes &lt;/li&gt;
&lt;/ul&gt;&lt;p&gt;Easy easy easy&amp;#8230; Pour your vegetable stock, coconut milk and curry into a pan and heat on medium heat 5-6 mins. Cut up your veggies and tofu ( I like keeping my button mushrooms and tomatoes whole). Peel then mince ginger root and then add everything to pan and cook for 8-10 mins.&lt;/p&gt;
&lt;p&gt;I didnt want to look up recipes of Thom Yum Soup because I wanted to challenge my taste buds into figuring out wha was in the soup. So don&amp;#8217;t be shocked when you see my recipe being very different from the traditional Thom Yum Soups..&lt;/p&gt;

&lt;p&gt;Tonight we are going Thai with a Vegan Coconut Red Curry Pasta. This recipe is inspired by my Aunt. Every Monday my Aunt and I do a work out and then she feeds me a yummy vegan dish. I&amp;#8217;ve taken her idea and added few things to make it my own. This recipe is more complex than my others but still fast and easy!&lt;/p&gt;
&lt;p&gt;&lt;em&gt;&lt;strong&gt;Vegan Coconut Red Curry Pasta&lt;/strong&gt;&lt;/em&gt;&lt;/p&gt;
&lt;ul&gt;&lt;li&gt;1&amp;#160;1/2 tbsp Red Curry &lt;/li&gt;
&lt;li&gt;1&amp;#160;14oz Can Coconut Milk&lt;/li&gt;
&lt;li&gt;3 tbsp Fresh Basil Chopped&lt;/li&gt;
&lt;li&gt;1 block Extra Firm Tofu&lt;/li&gt;
&lt;li&gt;1/2 cup of sliced baby carrots&lt;/li&gt;
&lt;li&gt;1/2 cup Sugar Snap Peas&lt;/li&gt;
&lt;li&gt; Asparagus&lt;/li&gt;
&lt;li&gt;1/2 cup Mushrooms&lt;/li&gt;
&lt;li&gt;Wheat and Buckwheat Pasta&lt;/li&gt;
&lt;li&gt;Vegetable Oil&lt;/li&gt;
&lt;/ul&gt;&lt;p&gt;Tofu is a tricky tricky thing! When sauteing Tofu you have to press the water out. To do this take paper towels and place them on a plate. Put your Tofu on top of the napkins. Next take a cutting board or another plate and add medium weight to the top. I used cans. This will take 15+ minutes.&lt;/p&gt;
&lt;p&gt;Okay down to business, start boiling that water. When water is at a boil add your pasta it should take 6 to 8 minutes. Next combine Coconut Milk, Red Curry and Basil in a pan and stir. This should be on medium heat for 7 to 8 minutes. In a saute pan heat up Olive Oil and place the veggies and tofu. Veggies and Tofu will be done when Tofu is crisp. When Veggies and Tofu are perfect add to the Red Coconut Curry Sauce and mix. Drain the pasta and either mix it into the sauce or place sauce on top of pasta. YOU ARE DONE, GET IT!&lt;/p&gt;

&lt;p&gt;As you know my posts will not only be about food but things that hold a special place in my heart. impossible 2 Possible or i2P is a organization that encourage youth to reach beyond their perceived limits, and to use adventure as a medium to educate, inspire and empower our global community to make positive change in the world.&lt;/p&gt;
&lt;p&gt;&lt;span class="text_exposed_show"&gt;Ray Zahab the founder of i2P is an amazing man In 2006/7, Ray and two other runners ran the entire width of the Sahara Desert-7500 kms (4600 miles) in 111 days with no rest days-and in the process learned of the seriousness of the water crisis in Africa. The run was documented in a film directed by Oscar winner James Moll and narrated by Matt Damon. One of the goals of the film is to raise awareness for the water crisis in Africa. He has done numerous other things but one was creating i2P which I was apart of. I got to join him along side other amazing people and run 200k across the Bolivia. This included the Salar de Uyuni which is salt flats and the Andes Mountains. This experience was one of the most amazing things I have ever done.&lt;/span&gt;&lt;/p&gt;
&lt;p&gt;Ray Zahab is at it again with another challenge infront of him. Expreso de los Andes will feature Ray and his buddy Kevin who will attempt to run approximately 1,700km or 1056 miles across South America, Pacific to Atlantic Ocean. Ray and Kevin &lt;span class="text_exposed_show"&gt;will run 70km a day towards the Andes mountain range. While running at this altitude, they will try to maintain their pace until dropping down to the other side, where the goal is to run 100km/day for the remainder of the expedition.&lt;/span&gt;&lt;/p&gt;
&lt;p&gt;&lt;span class="text_exposed_show"&gt;Like you heard in the video you can follow Ray Zahab and train with him. Yes he said students but anyone can sign up and join the challenge. You can sign up at&lt;a href="http://www.andesrun.com/" rel="nofollow" target="_blank"&gt; andesrun.com/&lt;/a&gt;. It will be on the left side panel under challenge. So except the challenge!! Plus don’t forget to eat healthy and BE HEALTHY!&lt;/span&gt;&lt;/p&gt;

&lt;p&gt;&lt;em&gt;&lt;strong&gt;Pesto&lt;/strong&gt;&lt;/em&gt;&lt;/p&gt;
&lt;ul&gt;&lt;li class="ingredient"&gt;2 cups fresh basil leaves, packed&lt;/li&gt;
&lt;li class="ingredient"&gt;1/2 cup freshly grated Parmesan Cheese (If you are vegan.. well just leave it out its yummy with out as well)&lt;/li&gt;
&lt;li class="ingredient"&gt;1/2 cup extra virgin olive oil&lt;/li&gt;
&lt;li class="ingredient"&gt;1/3 cup pine nuts/walnuts(You can use just one but why not use both)&lt;/li&gt;
&lt;li class="ingredient"&gt;2 medium sized garlic cloves, minced&lt;/li&gt;
&lt;/ul&gt;&lt;p class="ingredient"&gt;You&amp;#8217;re going to need a food processor, but I&amp;#8217;ve been using the single serving blenders it works just as well as a food processor and if you are only making one meal I just cut the recipe in half.&lt;/p&gt;
&lt;p class="ingredient"&gt;Okay! Add your pine/walnuts and chopped basil to the food processor pulse for abit until it gets to a good texture. Then go ahead and add your minced garlic, olive oil and Parmesan and press the go button on the food processor. You might have to stop it and scrape the excess of the sides but then turn that puppy back on. Once you have the consistency you want pour it on some pasta and wam bam you have your Presto Pesto Pasta.&lt;/p&gt;
&lt;p class="ingredient"&gt;The pesto also taste great as a dip for bread! Boom can you say appetizer!&lt;/p&gt;

&lt;p&gt;So today I decided to make a fun dish called Presto Pesto Pasta! Its once again SIMPLE!&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;&lt;em&gt;Presto Pesto Pasta&lt;/em&gt;&lt;/strong&gt;&lt;/p&gt;
&lt;ul&gt;&lt;li&gt;Pesto (I will be adding a recipe or you can buy from a store)&lt;/li&gt;
&lt;li&gt;Whole Wheat Pasta (your preference)&lt;/li&gt;
&lt;li&gt;Sweet Peppers&lt;/li&gt;
&lt;li&gt;Mushrooms&lt;/li&gt;
&lt;li&gt;Olive Oil (This will be for the cooking pan)&lt;/li&gt;
&lt;/ul&gt;&lt;p&gt;So first step is to start boiling that water! While water is getting ready start prepairing your veggies! Wash and cut up your sweet peppers and mushrooms. Once water is at a boil pour your oodles of noodles into the pot. Then start heating your olive oil in a saute pan. I like to at least cover the bottom of my pan. When oil is ready cook those veggies up. Be aware and afraid that oil will pop at you when you add those veggies. Make sure you stir the veggies! At this time you can start making your pesto. If you already have it done or bought it from the store, congrats its just a waiting game for you! Once noodles are cooked, drain the water and add the pesto to the pasta. Make sure you stir so all the noodles get a piece of this Pesto. You can either add your cooked veggies to your pasta and stir it in or put them on top! Alakazam your Presto Pesto Pasta is complete.&lt;/p&gt;

&lt;p&gt;So since i&amp;#8217;m a runner and a vegetarian its hard sometimes to get enough protein in my diet. With that said I try and drink one Spiru-Tein shake a day. Spiru-Tein not only has soy protein and whey protein, it packs a mean punch of all your essential vitamins for the day. It comes in multiple flavors. I&amp;#8217;m told cookie dough and cookie and cream are the best but I haven&amp;#8217;t tried them yet! They also have your original flavors such as chocolate, strawberry, and vanilla.&lt;/p&gt;

&lt;p&gt;Some days I mix it with just water or soy/almond milk for a quick morning meal replacement. Tonight it&amp;#8217;s almost a dessert it taste so good. I blend it with banana&amp;#8217;s peanut butter and soy,rice or almond milk. A dessert that&amp;#8217;s healthy, yes please!&lt;/p&gt;
&lt;p&gt;&lt;em&gt;&lt;strong&gt;Shake it up&lt;/strong&gt;&lt;/em&gt;&lt;/p&gt;
&lt;ul&gt;&lt;li&gt;1 tbsp. Peanut Butter&lt;/li&gt;
&lt;li&gt;Half banana&lt;/li&gt;
&lt;li&gt;Scoop Spiru-Tein Chocolate&lt;/li&gt;
&lt;li&gt;1 Cup Soy, Rice or Almond Milk&lt;/li&gt;
&lt;/ul&gt;&lt;p&gt;Its so easy and yummy! I use a single serving blender but you can use a regular blender as well. All you do is add all your ingredients and blend it up. You Scream, We Scream, We all Scream for&amp;#8230;.. Chocolate, Peanut Butter and Banana Shake? haha I need a name for this! Help me out here!&lt;/p&gt;

Only using whatever I could find I created The Oscar. The vegetarian &amp;#8220;garbage&amp;#8221; wrap but it&amp;#8217;s healthy. It&amp;#8217;s named after Oscar the Grouch. Get it I was grouchy and whatever I could find in the kitchen.&lt;/p&gt;
&lt;p&gt; The Oscar consist of a whole wheat wrap or flat bread smothered with hummus. I then cut up some avocado and lettuce and sprinkle it onto the bread and hummus. HERE is the tricky part I cut up some peppers and mushrooms and sauteed them in olive oil. After cooking I laid them on top of the bread and well that&amp;#8217;s a wrap folks! Ha no pun intended.&lt;/p&gt;
&lt;p&gt;&lt;em&gt;&lt;strong&gt;The Oscar&lt;/strong&gt;&lt;/em&gt;&lt;/p&gt;
&lt;ul&gt;&lt;li&gt;Whole Wheat flat bread/wrap&lt;/li&gt;
&lt;li&gt;Lettuce&lt;/li&gt;
&lt;li&gt;Peppers (Sweet Peppers)&lt;/li&gt;
&lt;li&gt;Avocado&lt;/li&gt;
&lt;li&gt;Hummus&lt;/li&gt;
&lt;li&gt;Lettuce/Spinach&lt;/li&gt;
&lt;li&gt;Mushrooms&lt;/li&gt;
&lt;li&gt;Olive Oil&lt;/li&gt;
&lt;strong&gt;﻿&lt;/strong&gt; 
&lt;/ul&gt;&lt;p&gt;&lt;strong&gt;&lt;em&gt;Hummus&lt;/em&gt;&lt;/strong&gt;&lt;/p&gt;
&lt;p&gt;I usually make my own hummus but you can buy it from the store as well. Here is my hummus recipe.&lt;/p&gt;
&lt;ul&gt;&lt;li&gt;1 garlic clove&lt;/li&gt;
&lt;li&gt;1 (19 oz) can garbanzo beans &lt;/li&gt;
&lt;li&gt;1 Lemon &lt;/li&gt;
&lt;li&gt;1/4 cup Olive Oil&lt;/li&gt;
&lt;/ul&gt;&lt;p&gt;Chop or mince the garlic clove, drain the garbanzo beans, squeeze the lemon ha. Then add everything to a food processor. PRESS the button and yum HUMMUS!. Easy huh. You can also add salt and pepper or even 1 teaspoon of cumin if you&amp;#8217;re feeling froggy.&lt;/p&gt;
